The Gardens &
Orchards

What are Regenerative and Bio-Dynamic principles?

We run our farming according to regenerative and bio-dynamic principles. Quite simply, this means that we farm using many of the same principles and practices our grandparents used.

We use scraps from the garden and the restaurant to supplement the chicken and pig foods. We use the manure from the chicken and pigs to nourish and feed the gardens and orchards. The methods we learned from past generations contributes to a dynamic, self-renewing system of farming that doesn’t need chemical fertilizers, pesticides or other artificial inputs.

We use scraps from the garden and the restaurant to supplement the chicken and pig foods. In a regenerative eco-system, there is no hard line between the orchards, gardens, and animal pastures. Each feeds into the other.

Our partner restaurant, Pineridge Hollow, consumes over 50 pounds of lettuce in any given week. Here you can see one of our gardeners washing and packing the lettuce, ready to ship just a few miles down the road.

Our role in farm-to-table.

Central to who we are is the concept of “farm-to-table”. We provide up to 90% of our vegetables, fruit, and berries, as well as meat, for Pineridge Hollow restaurant. Farm-to-table is not only about healthy food, but also about local investment and sustainable economics. As PH is just down the road from us and part of the same family, we are able t0 focus on the well-being of our local community.

Enriching Soil

We aim to enrich the soils and leave them healthier and more fertile with our crop rotations, green manure cover crops and fertilization from our animals.

We don’t use any chemicals on our plants and we employ minimal levels of tillage on our soil. To ensure healthy levels of nitrogen, we rotate between nitrogen-fixing and nitrogen-consuming plants on any given area of land.
